4 oz (100g) pecan nuts chopped
2 oz (50g) butter
2 tablespoons brown sugar
2 tablespoons maple syrup
3/4 (375ml) pint milk
3/4 pint (375ml) double/heavy cream
Using a frying pan, slowly melt the butter then add the chopped pecan nuts. Sprinkle on the sugar, stir and cook on a medium heat for approx 3-4 minutes until the nuts are crisp. NB. Cooking on too high a heat will burn the pecan nuts and render a bitter taste. Remove from the pan and place to one side to cool. Generous amount grated nutmeg

1 pint of Half & Half*
1 ½ teaspoons vanilla
1/3 cup + 2 tablespoons sugar
Add ¼ cup crushed peppermint candy.
Optional: add a few drops red food coloring and/or 1/8 teaspoon mint extract.

Cranberry ice cream is especially nice for the holidays. It is easy to make at home. If you cannot find fresh cranberries, try using frozen ones with a slight reduction in cooking time.
CRANBERRY ICE CREAM
[Makes 1 Quart]
INGREDIENTS:
* 1 package (12 ounces) cranberries, picked over and washed
* 1/4 cup water
* 1/4 teaspoon ground cinnamon
* 2-3/4 cups heavy whipping cream
* 1 cup granulated white sugar
* 1/4 teaspoon pure vanilla extract
PREPARATION:
Place cranberries and water in a heavy saucepan. Bring to a boil, lower heat, cover, and simmer about 10 minutes until the fruit has popped and become soft.

1 cup mashed cooked pumpkin
1 3/4 cups whipping cream
1/2 cup sugar
1/2 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp ginger
