18 Feb 2008 1 cup half-and-half 1 cup heavy cream 4 ounces Egg Beaters or other egg substitute 2 tablespoons sugar Dash salt 3 (1.5-ounce) chocolate-covered peppermint patties 1 teaspoon vanilla extract 6 hard peppermint candies, crushed (optional) Combine half-and-half, cream, Egg Beaters, sugar and salt in a blender or food processor. Blend to combine. Cut peppermint patties into 1/2-inch chunks, add to blender with vanilla and process on high until smooth. Cover and refrigerate until ready to freeze. Blend for a few seconds before pouring into the ice cream maker. Follow the manufacturer's instructions for freezing. Here is a wonderful recipe for Orange Jaffa (Oráiste) Ice Cream Ingredients: 130g sugar 5 egg yolks 240 ml cream 200 ml milk Zest (grated peel) of half an orange 50 g marmalade 4 Jaffa cakes What to do: Add the orange zest to the milk and bring to a simmer. Remove from the heat. Beat the sugar and egg yolks together until thick and pale yellow. Beat the milk into the eggs and sugar in a slow stream. It comes from the roasted roots of dandelions which for years were used as an alternative to coffee. 2 ½ cups heavy cream 1 ½ cups half-and-half 1 ¼ cups sugar 5 egg yolks 1. Grind Roasted Dandelion Roots into a powder using a coffee mill and sifter. 2. Place cream, half-and-half and sugar in a medium pot (double boiler might be best, or perhaps a crock pot).
