In an effort to balance my resolution to lose weight AND make more homemade ice cream, I've been searching for frozen yogurt recipes. I know frozen yogurt isn't ice cream, but if you make it correctly you'll love it just as much!
Renowned chef David Lebovitz's new cookbook - The Perfect Scoop has a marvelous frozen yogurt recipe that some say rival Pinkberry's.
Vanilla Frozen Yogurt Recipe
Notes: Be sure to use good quality whole-milk yogurt so that your final creation doesn't suffer. You can add or subtract the sugar to taste and of course add any other ingredients you want.

American federal labeling standards require ice cream to contain a minimum of 10% milk fat (about 7 grams (g) of fat per 1/2 cup [120 mL] serving) and 20% total milk solids by weight (Thank you Wikipedia). So by definition, any "ice cream" made without milk isn't really ice cream. But don't worry, we'll still let you call it that!
So can you replace the milk in your ice cream recipe with something else and have it still taste good? YES!

Your mother always told you to eat your vegetables. But she never said you couldn't eat them as dessert!
Last week I posted the video of Regis & Kelly sampling the Thanksgiving dinner ice cream flavors from Country Cow Creamery. So here's a great sweet corn recipe I found so you can make your own.
Fresh corn is rich is thiamin (vitamin B1), panthothenic acid (vitamin B5), folate, dietary fiber, vitamin C, phosphorus and manganese. It supports the health of your heart and your lungs, improves memory and helps maintain energy.
So why not eat it in the form of ice cream?!

Ok, so I recently found a little shop in downtown Portland, ME called Bubble Maineia. They make the best "bubble teas" I have had since I first found out about them a few years ago. I bought a chocolate coconut milkshake with bubbles the last 2 times I stopped by. It was such a delicious flavor combination that I tried making it at home with chocolate milk and coconut milk. It didn't quite come out the same.
After searching online, I found a great chocolate coconut ice cream recipe by The Nourishing Gourmet.

Nuts are a great source of omega-3 fatty acids. If you're not too keen on fish ice cream or even avocado ice cream, try this great recipe for cinnamon black walnut ice cream. Walnuts are one of the best nuts for omega-3's.
4 cups heavy cream
4 cups half-and-half
2 cups white sugar
2 1/2 cups chopped black walnuts
1 tablespoon vanilla extract
1 teaspoon ground cinnamon
1/2 teaspoon salt
In a large bowl, stir together the heavy cream, half-and-half, sugar, walnuts, vanilla, cinnamon, and salt. Cover and refrigerate for 30 minutes. Pour the mixture into the bowl of an ice cream maker and freeze as directed ... {Tags: cinnamon, omega-3s, walnuts} {More...}

Please forgive the cheesy post title.
When Dairy is Not Your Friend is a great blog written by Sara who describes herself as "Slightly obsessive about many things." I, for one, am glad she's obsessive about soy ice creams. She has a great post reviewing many flavors of soy ice creams found in various stores. Definitely check it out if you're lactose intolerant and still want ice cream, or if you just need to read a review before forking over the cash for a pint of soy ice cream.

There is never-ending supply of information about omega-3 fatty acids and how, when added to your diet, they can vastly improve your cholesterol & triglyceride levels and also help with your hair, skin and nails. Even people who regularly consume foods rich in omega-3s (like salmon, avocados and nuts) are being urged to take a fish oil supplement because we just don't get enough.

As a person who loves ice cream and is also trying to diet, I'm a little bummed that most recipes for homemade ice cream require thick, heavy creams. I know that the cream is what gives ice cream its texture and everything, but I want something light that still tastes like ice cream!

Everything in moderation. You don't have to give up ice cream all together when you're doing a low carb diet. There are plenty of low carb ice cream recipes you can easily make at home!
