American federal labeling standards require ice cream to contain a minimum of 10% milk fat (about 7 grams (g) of fat per 1/2 cup [120 mL] serving) and 20% total milk solids by weight (Thank you Wikipedia). So by definition, any “ice cream” made without milk isn’t really ice cream.  But don’t worry, we’ll still let you call it that!

So can you replace the milk in your ice cream recipe with something else and have it still taste good?  YES!

J. Scott Wilson wrote this great piece comparing non milk ice creams on the Life While blog.

However, those who are lactose intolerant, vegan or who simply are trying to cut some excess fat from their diets don’t have to live in ice cream-less obscurity. You may need to hit your local health food or gourmet store to find them, but there is a good variety of non-dairy ice cream substitutes made with tofu, soy milk and even coconut milk.

Here are some milk subsitutes you can use the next time you make ice cream: coconut milk, soy milk, nut milk, rice milk, oat milk, potato milk, goat milk and yes, even human milk.

PS - I cheated on my cholesterol free diet with Blue Bunny Premium Homemade Chocolate, one of the most popular national brands: 150 calories, 7 grams fat, 35 mg cholesterol, 45 mg sodium, 16 grams carbs.  I must find a non-cholesterol version of this delicious flavor!

Thanksgiving Flavors

Country Cow Creamery gets my vote for the most interesting ice cream flavors.   Check out this video clip from Regis & Kelly where they sample some of the Thanksgiving flavors: beer, green beans, creamed corn, turkey & gravy… you get the idea.

It’s almost Halloween!  Dress up your desserts by making these homemade chocolate Halloween ice cream sandwiches.

Yield: Makes about 2 dozen sandwiches

Chocolate Halloween Ice Cream Sandwiches

Ingredients:

  • 2 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 1-1/4 cups sugar
  • 2/3 cup butter, softened
  • 1/4 cup light corn syrup
  • 1 egg
  • 1 teaspoon vanilla
  • 3 pints mint chocolate chip and/or vanilla ice cream (make your own with the recipes on our blog).
  • Black and orange sprinkles, colored sugars or other Halloween cookie decorations (optional)
Preparation:

1.  Preheat oven to 350°F. Combine flour, cocoa, baking soda and salt in medium bowl. Beat sugar and butter in large bowl with electric mixer at medium speed until light and fluffy. Add corn syrup, egg and vanilla; beat until well blended. Gradually beat in flour mixture at low speed until blended. Cover and refrigerate dough about 15 minutes or until firm.

2. Shape dough by tablespoonfuls into 1-inch balls; place 2 inches apart on ungreased cookie sheets. Flatten slightly with fingers. Bake 10 to 12 minutes or until cookies are set. Immediately transfer to wire racks; cool completely.

3. Soften ice cream at room temperature about 10 minutes or in microwave oven on MEDIUM (50%) 10 to 20 seconds. For each ice cream sandwich, place about 1/4 cup (1 small scoop) ice cream on flat side of one cookie; top with another cookie, flat side down. Press gently so that ice cream meets edges of cookies. Immediately roll edges of ice cream in decorations, if desired. Wrap in plastic wrap; freeze until ready to serve.

Remember that “gross” dessert made from pudding and oreos and gummy worms?  Kids love it as is, but imagine how popular it would be if it was made from ice cream instead.

You’ll need:

1. An ice cream ball (or two, depending on how many kids are involved)

2. Ice cream mix (we’ve got some great recipes on this blog)

3. Gummy worms

Here’s how to make this spooktacular dessert:

As the kids are making the ice cream in the ice cream ball, fill the bottom of your cups with crushed oreos.  Once the kids are done making the ice cream, scoop out a layer of vanilla or chocolate ice cream and put it on top of the layer of “dirt”.  Let the kids cover it with another layer of cookie crumbs, then ice cream… as many layers as they want (and will fit in the cup).  The final layer should have cookie crumbs so the worms have a place to rest.  Top each cup with one gummy worm.

National Stay At Home Week

ABC recently declared the week of Sept 21st “National Stay At Home Week” and urged its veiewers to conserve gas by staying indoors (and watching the fall premieres of all their shows).

So if you’re going to participate in all this stay-at-home-tv-watching you’ll need some yummy ice cream to eat!  Save your gas and make your ice cream right at home with simple ingredients like half-n-half, sugar and vanilla.  Make it in the Play & Freeze and you’ll get your workout routine in, too!
