Growing up I always enjoyed spending time camping with my family -- swimming, hiking, cooking over the campfire. It was always a wonderful time. Our coolers, of course, were filled to the brim with ice to keep everything cool. At the end of the trip, though, we always ended up having to dump all that ice out. Had I known you could make ice cream while camping, I would have suggested it to my parents so we could put that ice to good use (and so I could eat more ice cream)!

If you've been avoiding ice cream because you're lactose intolerant, try goat milk ice cream. Almost half of people who are lactose intolerant are able to drink goat's milk.
Laloo's is a great example of goat milk ice cream. Karen Leland, author of an article entitled Got Goat? on Hitched Magazine's website writes, "As ice cream goes, Laloo’s is not only delightfully good, but also reasonably good for you. Goat’s milk is low in lactose and an excellent substitute for those who can’t tolerate milk. Carrot cake has to be one of my favorite ways of consuming carrots. I love it so much, especially the cream cheese frosting. Mmmm. The lovely Agnes over at A Vegan Ice Cream Paradise is my new hero for combining carrot cake and ice cream. Here's her recipe:
2 c. soy creamer (or other non-dairy milk)
½ c. soy milk (or other non-dairy milk)
1 8-ounce container vegan cream cheese
¾ c. brown sugar
½ t. cinnamon
¼ t. powdered ginger
pinch allspice (optional)
pinch nutmeg (optional)
2 T. arrowroot
1 t. vanilla
2 c. crumbled carrot cake chunks

I love licorice. I never really thought of having licorice ice cream, but now that I've come across Thomas R Quinn's White Licorice Ice Cream recipe the thought is stuck in my head!
"A good friend of mine is fond of licorice candy. She kept asking me, half-teasingly and half-seriously, to make licorice ice cream for her. After repeated requests, I developed the following recipe. Now all she says is, "Why isn't it black?"
4 eggs
2-2/3 cups sugar
about 7 cups whole milk
3 cups whipping cream
1 teaspoon anise flavoring
Blend the eggs and sugar together well in a large pan.

Martha Stewart also has a simple green tea ice cream recipe on her site. Green tea ice cream is popular in Japan and is really easy to make!
Ice Cream How-To
In a large bowl, whisk together 1 cup reduced-fat milk and 3/4 cup sugar until sugar is nearly dissolved, 2 to 3 minutes. Whisk in 2 cups heavy cream. One tablespoon at a time, add 4 tablespoons green-tea powder, whisking continuously to prevent lumps from forming. Transfer the mixture to an ice-cream maker and freeze according to the manufacturer's instructions. Edy's is continuing their trend of making some dough off the popularity of American Idol. You can vote for one of the flavors to be the newest American Idol.
Personally, the Mint Karaoke Cookie and Cheesecake Diva look yummy to me... however, I know they'll be packed with preservatives and fat and calories, oh my.
Martha Stewart has a yummy mint chocolate chip gelato recipe on her site.
Makes about 1 quart
2 1/2 cups whole milk
14 sprigs fresh mint
5 large egg yolks
2/3 cup sugar
1 cup heavy cream
1/4 teaspoon pure peppermint extract
4 ounces semisweet chocolate, chopped

Here's a neat recipe for making your own sushi shaped ice cream from Dreyer's website.
[Makes 12]
6 large scoops of ice cream.
12 sugar cookies
3 green fruit roll snacks, cut into 12 one-inch-wide strips
colored sprinkles
caramel and chocolate syrup
candy fish (optional)
1. Place 3 scoops of ice cream in a row on a piece of plastic wrap or wax paper. Wrap and press ice cream into a 1-1/2-inch by 7-1/2-inch roll. Place in freezer. Repeat for second roll. Freeze rolls several hours until firm.
2. Put cookies in a plastic bag; crush with a rolling pin or your hands to make fine crumbs.

Spring is finally here! Everyone is starting to go back outside and enjoy nature and the ice cream shops will be opening again soon. Here are a few outdoorsy/spring creations you can make:
S'Mores
ingredients:
48oz ice cream (make it yourself in an ice cream ball)
4 graham crackers (8 small squares)
4 teaspoons marshmallow fluff
4 teaspoons fudge syrup
1. Break a graham cracker in half forming two squares.
2. Coat one square with a teaspoon of fluff and the other with a teaspoon of fudge.
3. Place a rounded scoop of the ice cream creation in the center of the fluff-coated
graham cracker.
