Peppermint Pattie Ice Cream

18 Feb 2008 1 cup half-and-half 1 cup heavy cream 4 ounces Egg Beaters or other egg substitute 2 tablespoons sugar Dash salt 3 (1.5-ounce) chocolate-covered peppermint patties 1 teaspoon vanilla extract 6 hard peppermint candies, crushed (optional) Combine half-and-half, cream, Egg Beaters, sugar and salt in a blender or food processor. Blend to combine. Cut peppermint patties into 1/2-inch chunks, add to blender with vanilla and process on high until smooth. Cover and refrigerate until ready to freeze. Blend for a few seconds before pouring into the ice cream maker. Follow the manufacturer's instructions for freezing. PHOTO CREDIT: Luca Trovato The Cupcakes:   12 chocolate cupcakes (made with your favorite recipe) 2 pints cherry chocolate ice cream (see recipe below!) 1 pint chocolate frosting Directions: Using a tablespoon or large melon baller, scoop out about a golf-ball-size portion of cake from the top of each cupcake. Soften the ice cream slightly and spoon a scoop into each cupcake cavity. Place the frosting in a piping bag with a star tip and pipe the frosting over the tops of the cupcakes. Freeze for 1 hour. 25 Jan 2008 If you think your ice cream is too plain, try mixing your favorite candy or nut in! Vanilla ice cream is a wonderful base for more exciting ice creams. Chocolate & mint go well together. So do chocolate and raspberries or cherries. The possibilities are endless! Just remember to add your stuff in during the last 5 mins or so of the freezing process. If you add it in earlier the ice cream might not freeze well or your mix ins will lose their consistency (i.e. soften too much, get soggy, etc).
